Dulma

Dulma is a traditional dish in the Middle East that is made by stuffing grape leaves with a mixture of rice and vegetables. Here is a recipe for dulma that you can try at home:

Ingredients:

  • 1 cup uncooked white rice
  • 1/2 cup diced onion
  • 1/2 cup diced tomato
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/2 cup diced parsley
  • 1/2 cup diced fresh dill
  • 1/2 cup diced fresh mint
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 jar grape leaves
  • Water for boiling

Instructions:

  1. Rinse the rice and add it to a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the rice is cooked.
  2. In a large bowl, combine the cooked rice, onion, tomato, bell peppers, cucumber, parsley, dill, and mint. Mix well.
  3. Add the lemon juice, olive oil, salt, and pepper to the bowl and mix well to combine.
  4. Rinse the grape leaves and pat them dry.
  5. To assemble the dulma, place a grape leaf flat on a work surface, with the stem end facing you. Place a spoonful of the rice mixture in the center of the leaf. Fold the stem end over the filling, then fold the sides in towards the center and roll the leaf tightly to enclose the filling. Repeat with the remaining leaves and filling.
  6. Place the dulma in a large pot and add enough water to cover the dulma. Bring to a boil, then reduce the heat to low and simmer for about 45 minutes, or until the dulma are tender.
  7. Serve the dulma warm or at room temperature, garnished with additional lemon juice and parsley if desired.
