Fatoush
Here is a recipe for classic fatoush:
Ingredients:
- 4 cups stale pita bread, cut into small cubes
- 4 cups mixed salad greens (such as lettuce, arugula, and spinach)
- 1 cup cherry tomatoes, halved
- 1 cucumber, peeled and diced
- 1/2 cup finely chopped parsley
- 1/2 cup finely chopped mint
- 1/4 cup finely chopped red onion
- 1/2 cup crumbled feta cheese
- 1/2 cup toasted pine nuts (optional)
For the dressing:
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp salt
Instructions:
- Preheat the oven to 400°F (200°C).
- Place the pita bread cubes on a baking sheet and bake until they are crispy and golden, about 10-15 minutes. Remove the pita bread from the oven and let it cool.
- In a large bowl, combine the salad greens, cherry tomatoes, cucumber, parsley, mint, red onion, feta cheese, and pine nuts (if using).
- In a small bowl, whisk together the lemon juice, olive oil, garlic, cumin, paprika, and salt to make the dressing.
- Add the cooled pita bread and the dressing to the salad and toss gently to combine.
- Serve the fatoush immediately. Enjoy!
