Fatoush

Here is a recipe for classic fatoush:

Ingredients:

  • 4 cups stale pita bread, cut into small cubes
  • 4 cups mixed salad greens (such as lettuce, arugula, and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled and diced
  • 1/2 cup finely chopped parsley
  • 1/2 cup finely chopped mint
  • 1/4 cup finely chopped red onion
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pine nuts (optional)

For the dressing:

  • 1/2 cup lemon juice
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Place the pita bread cubes on a baking sheet and bake until they are crispy and golden, about 10-15 minutes. Remove the pita bread from the oven and let it cool.
  3. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, parsley, mint, red onion, feta cheese, and pine nuts (if using).
  4. In a small bowl, whisk together the lemon juice, olive oil, garlic, cumin, paprika, and salt to make the dressing.
  5. Add the cooled pita bread and the dressing to the salad and toss gently to combine.
  6. Serve the fatoush immediately. Enjoy!
