Baba Ghanouj

Here is a recipe for classic baba ganouj:

Ingredients:

  • 2 large eggplants
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • Chopped fresh parsley or paprika for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and place them cut-side down on a baking sheet. Roast the eggplants until they are soft and tender, about 40-50 minutes.
  3. Let the eggplants cool until they are easy to handle, then scoop the flesh out of the skins and into a food processor.
  4. Add the tahini, garlic, lemon juice, and salt to the food processor. Pulse until the mixture is smooth and well combined.
  5. With the food processor running, slowly add the olive oil. The baba ghanoush should be smooth and creamy.
  6. Transfer the baba ghanoush to a serving dish and smooth the top with the back of a spoon. Garnish with chopped parsley or paprika, if desired.
  7. Serve the baba ghanoush with pita bread, veggies, or crackers for dipping. Enjoy!
