Palestinian Maqlouba

Maqlouba is a traditional Middle Eastern dish made with chicken, vegetables, and rice. Here is a recipe for you to try:

Ingredients:

  • 1 whole chicken, cut into pieces
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of long-grain rice
  • 2 cups of chicken broth
  • 1 cup of canned chickpeas, drained
  • 1 cup of diced tomatoes
  • 1 cup of diced eggplant
  • 1 cup of diced zucchini
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh parsley, for garnish

Directions:

  1. Heat a large pot or Dutch oven over medium-high heat. Add some olive oil and sauté the onions and garlic until softened.
  2. Add the chicken pieces and cook until golden brown on both sides.
  3. Add the rice and stir to coat it with the oil and chicken.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the chickpeas, tomatoes, eggplant, and zucchini. Season with salt and pepper to taste.
  6. Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for about 25 minutes or until the rice is cooked and the vegetables are tender.
  7. When the dish is ready, carefully invert the pot onto a large platter, so that the maqlouba is upside down. Garnish with fresh parsley and serve.
