Mansaf

Mansaf is a traditional Jordanian dish made with lamb, yogurt, and rice. Here is a recipe for mansaf:
Mansaf
Ingredients:
  • 1 kg lamb, cut into 2-inch pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 cups water
  • 2 cups basmati rice
  • 1/2 cup plain yogurt
  • 2 tbsp butter
  • 1/2 cup slivered almonds
  • Chopped fresh parsley for garnish (optional)
Instructions:
  1. In a large pot, combine the lamb, onion, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Add enough water to cover the lamb. Bring to a boil, then reduce the heat to low and simmer until the lamb is tender, about 1 hour.
  2. Remove the lamb from the pot and set aside. Strain the cooking liquid and reserve 1 cup.
  3. Rinse the rice in a fine-mesh sieve until the water runs clear. In a large saucepan, bring the reserved cooking liquid and 2 cups of water to a boil and add the rice. Reduce the heat to low, cover, and simmer until the rice is tender and the water has been absorbed, about 20 minutes.
  4. To assemble the mansaf, place the cooked rice in the bottom of a large, deep serving dish. Top with the cooked lamb.
  5. In a small saucepan, melt the butter over medium heat. Add the slivered almonds and cook until they are toasted, about 5 minutes.
  6. Spread the yogurt over the top of the lamb and sprinkle with the toasted almonds. Garnish with chopped fresh parsley, if desired.
  7. Serve the mansaf hot, with the remaining cooking liquid on the side.
