Hummus
Here is a recipe for classic hummus:
Ingredients:
- 1 cup dried chickpeas
- 1/2 cup tahini
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp salt
- 3 tbsp olive oil
- 2-3 tbsp water
- Chopped fresh parsley or paprika for garnish (optional)
Instructions:
- Soak the chickpeas in water overnight.
- Drain and rinse the chickpeas, then place them in a large pot. Cover the chickpeas with water and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the chickpeas are tender, about 1 1/2 to 2 hours.
- Drain the chickpeas and let them cool.
- Place the chickpeas, tahini, lemon juice, garlic, cumin, paprika, and salt in a food processor. Pulse until the mixture is smooth and well combined.
- With the food processor running, slowly add the olive oil and 2-3 tablespoons of water. The hummus should be smooth and creamy. If it is too thick, add a little more water, 1 tablespoon at a time, until you reach the desired consistency.
- Transfer the hummus to a serving dish and smooth the top with the back of a spoon. Garnish with chopped parsley or paprika, if desired.
- Serve the hummus with pita bread, veggies, or crackers for dipping. Enjoy!
Note: You can also make hummus using canned chickpeas. Simply skip the first two steps and use 2 cups of drained and rinsed canned chickpeas in place of the dried chickpeas.
