Palestinian Maqlouba
Maqlouba is a traditional Middle Eastern dish made with chicken, vegetables, and rice. Here is a recipe for you to try:
Ingredients:
- 1 whole chicken, cut into pieces
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of long-grain rice
- 2 cups of chicken broth
- 1 cup of canned chickpeas, drained
- 1 cup of diced tomatoes
- 1 cup of diced eggplant
- 1 cup of diced zucchini
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh parsley, for garnish
Directions:
- Heat a large pot or Dutch oven over medium-high heat. Add some olive oil and sauté the onions and garlic until softened.
- Add the chicken pieces and cook until golden brown on both sides.
- Add the rice and stir to coat it with the oil and chicken.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the chickpeas, tomatoes, eggplant, and zucchini. Season with salt and pepper to taste.
- Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for about 25 minutes or until the rice is cooked and the vegetables are tender.
- When the dish is ready, carefully invert the pot onto a large platter, so that the maqlouba is upside down. Garnish with fresh parsley and serve.
