Baba Ghanouj
Here is a recipe for classic baba ganouj:
Ingredients:
- 2 large eggplants
- 1/4 cup tahini
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1/2 tsp salt
- 3 tbsp olive oil
- Chopped fresh parsley or paprika for garnish (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Slice the eggplants in half lengthwise and place them cut-side down on a baking sheet. Roast the eggplants until they are soft and tender, about 40-50 minutes.
- Let the eggplants cool until they are easy to handle, then scoop the flesh out of the skins and into a food processor.
- Add the tahini, garlic, lemon juice, and salt to the food processor. Pulse until the mixture is smooth and well combined.
- With the food processor running, slowly add the olive oil. The baba ghanoush should be smooth and creamy.
- Transfer the baba ghanoush to a serving dish and smooth the top with the back of a spoon. Garnish with chopped parsley or paprika, if desired.
- Serve the baba ghanoush with pita bread, veggies, or crackers for dipping. Enjoy!
