Mansaf
Mansaf is a traditional Jordanian dish made with lamb, yogurt, and rice. Here is a recipe for mansaf:
Mansaf
Ingredients:
- 1 kg lamb, cut into 2-inch pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 2 cups water
- 2 cups basmati rice
- 1/2 cup plain yogurt
- 2 tbsp butter
- 1/2 cup slivered almonds
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large pot, combine the lamb, onion, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Add enough water to cover the lamb. Bring to a boil, then reduce the heat to low and simmer until the lamb is tender, about 1 hour.
- Remove the lamb from the pot and set aside. Strain the cooking liquid and reserve 1 cup.
- Rinse the rice in a fine-mesh sieve until the water runs clear. In a large saucepan, bring the reserved cooking liquid and 2 cups of water to a boil and add the rice. Reduce the heat to low, cover, and simmer until the rice is tender and the water has been absorbed, about 20 minutes.
- To assemble the mansaf, place the cooked rice in the bottom of a large, deep serving dish. Top with the cooked lamb.
- In a small saucepan, melt the butter over medium heat. Add the slivered almonds and cook until they are toasted, about 5 minutes.
- Spread the yogurt over the top of the lamb and sprinkle with the toasted almonds. Garnish with chopped fresh parsley, if desired.
- Serve the mansaf hot, with the remaining cooking liquid on the side.
